🥑🌱🫘 RECIPE:
🛒 Ingredients
Salad:
1/3 cup goji berries (soaked 1 hour, then drained)
3 large handfuls dark leafy greens (e.g., spinach, arugula, dandelion, kale, endive, or bitter lettuce)
1/2 butternut squash, diced
1 x 15 oz can garbanzo beans (or 1 1/4 cups cooked)
1 ripe avocado, sliced
Small handful raw or toasted pumpkin seeds
🥑 Cilantro-Nettle Pesto:
1 large bunch cilantro (leaves only)
1 small handful fresh nettle (optional — handle with gloves!)
1/2 cup pepitas (pumpkin seeds)
1 clove garlic
1 cup finely grated parmesan (vegan or unpasteurized dairy)
1/2 cup extra virgin olive oil
1/4 tsp salt
1/4 tsp black pepper
Amargo bitters (start with 1 dropper full)
🔪 Method
Soak goji berries in water for 1 hour. Drain and set aside.
Preheat oven to 350°F (175°C).
Toss diced squash with olive oil and salt on a baking sheet. Roast for 15 minutes.
Pat garbanzo beans dry. After 15 minutes, add beans to the baking sheet. Roast together for another 10 minutes or until squash is tender and beans start browning. Set aside to cool.
🌿 Make the pesto:
In a food processor, blend cilantro, nettles, pepitas, and garlic until finely chopped (about 10 seconds).
Add parmesan and olive oil, pulse to combine into a chunky pesto.
Stir in salt, pepper, and Amargo bitters (start with 1 dropper; add more to taste).
🧄 Assemble the salad:
In a large bowl, combine greens, cooled squash and garbanzo beans, soaked goji berries, avocado, and pumpkin seeds.
Add about 2/3 of the pesto and toss until well coated.
Serve in bowls, drizzle with extra bitters if desired.
