Today’s delicious recipe: Corn Palak with Rice – a healthy, nutritious, and super simple Indian meal, perfect for lunch!

Steps:
1. Boil fresh palak (spinach) for 4-5 mins and set aside.
2. Blend the palak into a smooth puree.
3. In a pan, heat 1 tsp oil and sauté:
• 1 tbsp chopped garlic
• 1 medium chopped onion
• 1 medium chopped tomato
• 1 slit green chili
• spices
4. Add water and cook for sometime .
5. Mix in the blended palak puree and cook for 5–6 mins.
6. Add 100 gm corn and cook for 2 mins.
7. Serve hot with steamed rice and pickled onions. 😋
