Veg Spring Roll - Indian Style in 30 mins!

INGREDIENTS

VEG FILLING - for 5 spring rolls
2 tbsp oil
3/4 tbsp ginger-garlic paste
1 small onion
1 potato
1/2 carrot
2 green chilli
salt to taste
3 tbsp green peas
1/4 tsp turmeric powder
1 tsp Kashmiri chilli powder
1 tsp coriander powder
1/2 tsp garam masala
2 tbsp water
coriander leaves

SPRING ROLL SHEET - for 6-8 sheets
1 cup all purpose flour
1/4 cup cornflour
salt to taste
1 tbsp oil
1 1/2 cup water

PREPARATION
1. Heat 2 tbsp oil in a kadai and saute 3/4 tbsp ginger-garlic paste.

2. Now, add 1 small or 1/2 big sliced onion, 1 cubed potato, 1/2 cubed carrot, 2 chopped green chillies and salt to taste. Cover & cook for 5 mins on medium flame.

3. Add 3 tbsp green peas, 1/4 tsp turmeric powder, 1 tsp Kashmiri chilli powder, 1 tsp coriander powder and 1/2 tsp garam masala. Saute for a minute and add 2 tbsp water.

4. Cover & cook for 5 mins on medium flame. Finally add some coriander leaves.

5. In a bowl, add 1 cup all purpose, 1/4 cup cornflour, salt to taste, 1 tbsp and 1 1/2 cup water. Whisk well to a get smooth and slightly flowing thin consistency of the batter without any lumps.

6. The non stick pan should just become slightly hot and not too hot. Pour and spread the batter by tilting & rotating the pan. Cook both the sides for a min on medium flame.

7. Add the filling into the sheet and wrap & roll ( Refer step by step pictures above ). Stick the end with a thick sealing paste made with maida/all purpose flour and water

8. Deep fry them in hot oil on medium-high flame till it turns golden. Do flip them! Serve hot!
