Sourdough Discard Naan

Recipe adapted from Misty Ricardo Curry Kitchen

Ingredients:
200g T55 bread flour
200g Golden Horse high protein bread flour (13-13.4% protein)
25g baking powder
30g caster sugar
95g milk
54g egg
1/2 tsp salt
150g sourdough discard (1-2 day old)
38g water

Method:
1. Mix everything in a mixing bowl until dough comes together
2. Round up the dough, cover and let it rest for 1 hour at 29°C
3. Divide doughs into 67g (more if you prefer larger naan breads)
4. Cover and leave for about 2 hours
5. Heat a cast iron pan and let it get as hot as you can
6. Transfer flatten dough (water side down, oil side up) until the surface bubbles
7. Invert the pan and brown the top of the bread directly on the heat
8. Peel away the bread with a spatula
9. Immediately brush top with coriander minced garlic ghee
