Cilantro Citrus Ceviche

Today we're bringing you a no-cook, high protein, game changing lunch or dinner that is perfect for hot summer weather... our Cilantro Citrus Ceviche! Enjoy!

Cilantro Citrus Ceviche

Ingredients:
Zest from 2 limes, 2 lemons, 1 large orange
1/2 red onion, small diced
1 lb 16x20 shrimp, cut into thirds
1 lb bay scallops
1 lb octopus, tentacles and tubes
2 red, 2 yellow, 2 orange, mini peppers, small diced
5 sprigs of scallions, thinly sliced
salt & pepper
Cilantro Citrus Vinaigrette (see post/video from 7/28)
1 avocado, pit removed and sliced

In a large bowl add ingredients from zest through salt & pepper. Pour a healthy amount of Cilantro Citrus Vinaigrette and stir to coat seafood. Place in refrigerator to let the seafood marinate & "cook". Marinate for a minimum of 30 minutes and up to an hour or longer depending on how you like your seafood. Layer in some sliced avocado, just before serving.
