榴槤蛋糕

✤ 榴槤蛋糕材料:(這裡用戚風蛋糕的材料和造法,用海棉蛋糕亦可)
5只(大)/6只(中) 雞蛋
85克 幼砂糖
100克 低筋麵粉
50克 牛奶
45克 植物油
75克 榴槤肉醬
10克 白醋/檸檬汁

✤ 奶油忌廉:
50克榴槤果肉
350克奶油
30克幼砂糖 (如果榴槤肉非常甜,可減少用糖份量)

打好分2份,150克放入牛油忌廉內,剩餘的抹在蛋糕片之間。
✤ 牛油忌廉:
150克牛油(無鹽)軟化
65克 糖霜
75克榴槤肉醬
150克已打發奶油忌廉

牛油忌廉內加一些奶油忌廉,混合後可以令唧花不太硬又不會太容易溶化。

調色:
土黃 (南瓜粉) + 草綠 (綠茶粉) = 榴槤殻綠
啡色 (朱古力粉)
或者用沒有味道的食用顔色

Durian Cake

✤ Cake ingredients:
(Here we use chiffon cake recipe and method, sponge cake can also be used.)
5 eggs (large) / 6 (medium)
85g Caster sugar
100g Low-gluten flour
50g Milk
45g Vegetable oil
75 g Durian puree
10g White vinegar/ lemon juice

✤ Whipped thickened cream:
50g Durian pulp
350g Thickened cream
30g Caster sugar (if durian is very sweet, reduce the amount of sugar)

Divide the whipped thickened cream into 2 portions, put 150 grams into the buttercream, and spread the rest between the cake layers.

✤ Buttercream:
150g Unsalted butter (softened)
65g Icing sugar
150g Whipped thickened cream
75g Durian puree

Add some whipped thickened cream to the buttercream. After mixing, it will make the cream not too hard to pipe and not too easy to melt.

Colour toning:
Earth yellow (pumpkin powder) + grass green (green tea powder) = durian shell green
Brown (chocolate)
Or use food colouring that doesn't have flavour.
