Also this dish has its characteristic yellow color, aroma and flavor, with the signature ingredient “Sand Ginger” and other specific spices.
Ingredients:
Whole chicken around 1500g (3.5lb)
For marinating:
Salt 20g
Sand ginger (Galanga) powder 5g
Turmeric powder 3g
Pepper powder 3g
Licorice 3g
Sugar 3g
Chicken essence 10g
For salt crust:
Sea salt 1800g (4 lb)
Egg white 270g
