Super soft, citrusy and delicious
Ingredients:
3 eggs
220 g flour (1 cup + 3/4 cup)
180g sugar (3/4 cup + 3 tbsp)
50 ml vegetable oil (1/4 cup)
100 ml mandarin (1/3 cup + 1.5 tbsp)
2 tsp baking powder
zest of about 2 mandarins
Steps:
1. Start by separating egg yolks from whites. Combine sugar and mandarin zest with the yolks, beating until the mixture is light and creamy.
2. Blend in oil and fresh mandarin juice to the yolk mixture, creating a smooth consistency.
3. Sift in flour and baking powder into the yolk mixture, stirring until well combined.
4. In a separate bowl, whip the egg whites until firm peaks form.
5. Gently fold the whipped egg whites into the batter, ensuring an airy and light texture.
6. Sprinkle sugar in a baking pan and arrange mandarin halves on top.
7. Pour the prepared batter over the mandarins in a 8-inch pan (20 cm).
8. Bake the cake in a preheated oven at 340 °F (170 °C) until it turns golden brown, ensuring it's cooked through (about 40 minutes).
9. Once baked, allow the cake to cool. If necessary, remove a bit of the cake dome. Then, carefully flip it to reveal the mandarins on top.
10. Decorate with icing sugar if you like and dive in.
