3 eggplants, grilled and peeled
1 brown onion, finely diced
3-4 tbsp oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground turmeric
2 tbsp dried mint
1 tbsp saffron water
1/4 cup cold water
1/2 cup kashk (whey), extra for garnish

2 tbsp olive oil
2 tbsp dried mint
walnuts
