INGREDIENTS LIST:
6 ears of fresh corn (corn type of your choice)
or 4 cups or 660 g of corn fresh, frozen or canned
1 medium red onion small diced
2 medium jalapeños small diced
4 medium garlic cloves minced
1 1/2 cup or 276 g shredded mozzarella
6 oz. or 170 g cream cheese
2 large eggs
3/4 cup or 150 g yellow cornmeal
1/2 cup or 60 g all purpose flour
*Breading
3/4 cup or 40 g panko bread crumbs
1/4 cup or 85 g shredded parmesan cheese
*Sour cream
8 oz. or 226 g sour cream
juice and zest from 1 medium lime

Oil for frying
Balls should be 1 .oz. to 1.5 oz. or 28 g to 42 g
Fryer oil temp: 350 F or 176 C
