Apple cider pork roast

Ingredients
- 2 tsp olive oil
- 2 kg pork shoulder
- 2 onions, chopped
- 500 ml apple cider
- 2 tsp dijon mustard
- 3 cloves of garlic, chopped
- 5 g salt
- 5 g black pepper
- 1 apple, halved
- A few sprigs of rosemary and thyme tied together

Method
1. Pre-heat the oven to 180°C.
2. In a hot pan, sear the pork shoulder on all sides in the olive oil.
3. Remove from the pan and set aside.
4. In the same pan add the onions and deglaze the pan with the apple cider.
5. Add the mustard and garlic to the pan.
6. Season to taste.
7. Place the pork shoulder back into the pan with the apple and herbs, cover and cook for 3 hours or until tender.
8. Pull apart and combine the sauce in the pan.
9. Serve with your choice of side, we made creamy mash.
10. Enjoy!
