Brazo De Mercedes by Mai Goodness | Not Too Sweet Custard Filling | Easy To Make Chiffon Cake
A melt in your mouth Brazo De Mercedes with a not too sweet custard filling and lemon zest. Try this different from the usual store bought cake that you can serve this holiday season. It can be made easily at home as it includes simple and complete instructions for beginners in baking. Bake this for your family or for your home baking business!
Brazo De Mercedes
Ingredients:
Meringue:
• 8 large (260g) egg whites
• 1/2 tsp (1g) cream of tartar
• 1/2 cup (100g) white granulated sugar
• 1/8 tsp of almond extract
Custard Filling:
• 8 large egg yolks
• 1 big can (380ml) condensed milk
• 1 tsp vanilla extract
• 1/2 tsp iodized salt
• 1 zest of a lemon
Toppings:
• dust first with cornstarch to avoid moist to form before dusting with confectioners sugar
• 1/4 cup confectioner's sugar or icing sugar for dusting
*Preheat oven at 160⁰C for 15 minutes.
*Bake for 35 to 40 mins at the middle rack only. Turn it around halfway through at around 30 mins for even cooking and color.
*Do not open the oven to check until only after 30 mins to not deflate the cake.
*Put on a wire rack to cool.
Baking Dish Size:
10.5 x 14.5 x 2 inch rectangular pan, no non-stick pans
