The restaurant is headed by Mario Castrellon - one of Panama's celebrated chefs credited for having invented Chombasia cuisine - a tribute to Panama's Afro Carribean and Cantonese communities. In 2023, he was the recipient of the Estrella Damm Chefs' Choice Award.
