材料 (約二十隻) Ingredients (~20 dumplings):
小籠包皮 Wrapper
一百五十克中筋麵粉 150g Plain flour
八十毫升熱開水 80ml hot water
餡料 Filling
三百克豬肉碎(三分肥肉,七分瘦肉) 300g Minced pork (30% fat, 70% meat)
三百五十毫升雞湯 350g Chicken stock
一湯匙魚膠粉 1tbsp Gelatin powder
二十克薑米 20g Ginger
二十克紅蔥頭碎 20g Shallots
六十毫升熱開水 60ml Hot water
一茶匙幼鹽 1tsp Salt
半茶匙胡椒粉 1/2tsp Ground pepper
兩茶匙生抽 2tsp Soy sauce
一隻雞蛋 1 Egg
一茶匙麻油 1tsp Sesame oil
