Spaghetti with Spicy Clam Sauce

Ingredients

Breadcrumb Topping:

1/2 cup breadcrumbs
2 tablespoons olive oil
Zest of 1 lemon
2 tablespoons fresh parsley, minced
1/4 cup Pecorino Romano, grated

Pasta and Clam Sauce:

12 oz spaghetti
3 tablespoons olive oil
1 shallot, diced
3-4 cloves garlic, minced
1-2 tablespoons Calabrian chili paste (adjust to taste)
1/2 cup white wine
1/2 cup chicken broth
Juice from 2 cans of Cento minced clams (about 1/2 cup)
2 cans Cento minced clams
Salt and pepper to taste
2 tablespoons fresh parsley, chopped

Instructions

Breadcrumb Topping:

Toast the Breadcrumbs: In a medium pan, heat 2 tablespoons of olive oil over medium heat. Add the breadcrumbs and toast, stirring frequently, until golden brown and crispy, about 3-5 minutes.

Add Flavorings: Remove the pan from heat. Stir in the lemon zest, minced parsley, and grated Pecorino Romano until well combined. Set the breadcrumbs aside for topping the finished pasta.

Pasta and Clam Sauce:

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. (This process can be done while you are making the sauce).

In a large pan, heat 3 tablespoons of olive oil over medium heat. Add the diced shallot and sauté until softened, about 2-3 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Stir in the Calabrian chili paste, adjusting the amount to your preferred level of spiciness. Cook for another minute to let the flavors meld.

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer until the wine reduces by half, about 2-3 minutes.

Pour in the chicken broth and clam juice, bringing the mixture to a gentle simmer. Let it cook for about 5 minutes to allow the flavors to combine.

Add the minced clams to the pan and cook just until heated through, about 2 minutes. Season with salt and pepper to taste. Stir in the chopped fresh parsley.

Add the cooked spaghetti to the pan, tossing to coat the pasta evenly with the sauce.

Plate the pasta, then sprinkle the prepared breadcrumb topping generously over each serving.
