HOME COOKED GOAN DISHES in SINQUERIM (NORTH GOA) l Pork Vindaloo + Mushroom Xacuti + Kokum Sherbet

In today's episode we are joining our amazing hosts Joshua and his mother Adolfina from Soul Travelling, one of Goa's foremost tour and traveling companies, to indulge in some food experiences from serenity and drop dead surroundings of North Goa's Sinquerim village and the Aguaga Bay.
Our journey began from the Lower Aguada Fort where we met Joshua whose warm smiles and enthusiasm excited us for a wonderful day ahead. He gave us a brief tour of this wonderful fort that makes way for some stunning view of the vast stretch of blue ocean and sky around. Due to such an amazing location and its grand structure, Fort Aguada is one of Goa's popular attractions.
After soaking in the beauty of this part of the Aguada Bay Joshua, without revealing much, we took us to a quaint house in the locality for breakfast. Here we met Mrs. Adolfina who welcomed us and led us to the eating area which was set up on the verandah of the house. To our surprise we came to know that Adolfina was Joshua's mother and it was their house.
With greenery all around, this place was wonderfully serene and calm. Soon we sat down for the humble veg breakfast that Adolfina had prepared for us. There were appam, mushroom xacuti and coconut chutney. The xacuti had such different layers of flavours coming from the coconut and whole spices. While eating, Adolfina shared some interesting historical anecdotes about her family that had also been captured in Gregory Peck and Roger Moore starter Hollywood movie The Sea Wolves.
After finishing the meal we took a siesta and headed to Aguada Bay for a boat ride and angling. Joshua showed us how to use the fishing rod and Adolfina treated us to kokum sharbat and some bangda recheado. It was quite a thrilling experience.
When we returned to the bank, it was time for lunch and Adolfina and Joshua led us to another beautiful ancestral homestay in the neighbourhood where the meal was planned. It was another adorable quaint houses in the locality that deserved a visit. After taking a tour of the property we settled down for very simple yet quintessential lunch. Adolfina had prepared pork vindaloo and katriache pao for us the former is the most sough after Goan dish. The pork was tangy, spicy and sharp and full of flavours. We thoroughly enjoyed it with the pao that soaked up all the greasy curry.
With such dynamic and gracious hosts as company, this tour was both enriching and fascinating.
