# 🧀 **Sabudana Cheese Balls (Non-Vrat, Appe Pan Recipe)**

### ✨ Ingredients:

* Sabudana (sago) – ¾ cup (soaked 4–5 hrs or overnight, drained)
* Boiled potatoes – 2 medium (mashed)
* Roasted chana dal (pottukadalai) – 2 tbsp (dry roasted & powdered)
* Curry leaves – finely chopped
* Green chilies – 1–2 (finely chopped)
* Fresh coriander – 2 tbsp (chopped)
* Cheese – cubes or grated (for stuffing, use mozzarella or processed)
* Salt – to taste
* Chaat masala – optional, for a zing
* Oil or ghee – to grease the appe pan

### 👩‍🍳 Method:

1. **Prepare the Mix:**

* In a bowl, mix soaked sabudana, mashed potatoes, powdered roasted chana dal, curry leaves, green chilies, coriander, and salt.
* Add chaat masala if using.
* Mix everything well to form a dough-like texture.

2. **Shape & Stuff:**

* Take small portions of the mix, flatten, stuff with cheese, and roll into smooth balls.

3. **Cook in Appe Pan:**

* Heat appe pan and brush cavities with oil/ghee.
* Place balls in each section. Cover and cook on low-medium heat.
* Keep turning gently until golden and crisp on all sides.

4. **Serve Hot:**

* Serve with tomato ketchup, mint chutney, or spicy mayo.
