How We Spent Christmas Day! | VLOGMAS 2022

My famous "steakhouse" Truffle Lobster Mac recipe is HERE!
I perfected this dish through trial and error in order to low key meet my family's standards. The goat cheese is a serious family fave but you can sub for cream cheese and still get that rich flavor effect.
WHAT YOU'LL NEED...
13" glass casserole dish (recommended)
About 3 cups of [uncooked] macaroni shells
Truffle oil
1 pint of heavy whipping cream
2 cups of gouda cheese
2 cups of white cheddar cheese
4 oz softened goat cheese
4 lobster tails (or about 24 oz of chopped lobster meat)
Creole seasoning (your choice of brand)
1/4 cup of seasoned panko bread crumbs (to taste, optional)
INSTRUCTIONS...
*PRO TIP: Spray your casserole dish with Pam.
Cook macaroni shells until al dente (in chicken broth or seasoned water) then cool and set aside. Do NOT overcook, they will finish in the oven later and you don't want them soggy and breaking apart.
Chop lobster meat into 1 inch bite-sized pieces.
In the empty macaroni pot, add heavy whipping cream and bring to a light simmer (you can add 1/4 cup of leftover pasta water to quickly thicken your cheese sauce if you like).
Add gouda/cheddar cheese + 1 tbsp of truffle oil, creole seasoning and stir constantly until completely melted. The consistency you want will be similar to that of pancake batter.
Turn off burner and add cooked macaroni shells and gently stir until combined.
Transfer macaroni mixture to casserole dish and evenly spread.
Gently combine softened goat cheese and lobster meat with a soft stir. You don't want to break down the goat cheese too much.
Top with 1 even layer of white cheddar cheese then finally 1 even layer of panko bread crumbs.
Bake at 375 degrees for 35-40 minutes or when panko appears *evenly* golden brown throughout.
(This quantity makes about 8, 4oz servings ENJOY!)
