Quick Brown Rice Pumpkin Risotto│南瓜炖饭

A bit different from the traditional version (Italians don’t come at me), but still a delicious dish perfect for fall time. I love all the flavours combined in this risotto and it’s overall just such a comforting bowl of yumminess to indulge in.

INGREDIENTS

400 g fresh pumpkin
½ (50 g) onion
1 clove garlic
400 g cooked brown rice
3 tbsp (42 g) salted butter
1 ½ cups (250 g) chicken broth
Salt to taste
Pinch of nutmeg
2 tbsp (10 g) parmesan cheese
Few leaves of fresh sage
