My favorite cookies - Banana, almonds, nuts, dates, Olive oil edition

Perfect cookies for your break at work, a fast snack, or on the go. Gluten-free, dairy-free, vegan, easy to make, and bring along anywhere with you.

You will experience better brain clarity and reduced fatigue.

These cookies contain healthy fats (olive oil, almonds, and other nuts), a nice protein quantity (almonds), and fiber with some carbs from the dates and banana to keep you full and energized!

Prepare a batch or two in your free time (you will need approximately 30 minutes in total) and enjoy them throughout the week or during a trip. When you have good solutions ready, you are much less likely to buy less healthy options. It's some extra work, but I think we are worthy of this effort!

If the weather is too hot, I would recommend putting them in the fridge due to the banana.

Ingredients:

- 200 g crushed almonds
- 1 big banana (the ripest the sweetest - so it’s up to you)
- 2 tsp olive oil
- A few extra nuts cut in small pieces (e.g. 4 Brazilian nuts + 5 pieces of walnuts + 5 cashews)
- 4-5 nice dates
- A pinch of good salt (I didn’t use this in this video, but I think it will be beneficial to add some salt to break the small bitterness)

Procedure:

- In a deep plate, smash the banana with a fork until it has a smooth texture.
- Add the olive oil and mix together with the banana with a fork.
- Add the crushed almonds slowly in 3-4 parts, taking the time to mix well.
- Add the chopped nuts and mix everything together.
- Press down onto the plate with the fork to make the mixture one nice, concrete mass.
- Take 4-5 dates. Cut in half. Take away the seed. Cut each half in two or three smaller pieces.
- Preheat the oven to 350°F (175°C).
- Take a baking tray and place a parchment paper on top.
- Using the fork, take small batches of the dough. Place on the parchment paper.
- Take smaller batches of the dough and spread them evenly on the baking tray. Once all the dough is used, use the fork to softly but consistently press it down one by one to spread the dough and create cookie-style shapes. Or any shape you want. I usually do free style, keeping the marking of the fork. I like my cookies rather crispy, so I make them thinner. Experiment with the shape and thickness to your liking.
- Place the pieces of dates on the cookies and softly press them to kind of incorporate them with the cookies.

Cooking time: I tested different times, and for the specific cookies, the winner time for me was 16 minutes.
