How to make hot cheetos shrimp tempura sushiritto!

Learn how to make a shrimp tempura sushiritto! To top it off, I added a crunchy hot cheetos crust!

Shrimp Tempura Sushirrito (Sushi Burrito)
Serving size: 2-4 people

Ingredients
4 seaweed wrappers (nori)
8 large raw shrimp - peeled and cleaned
2 cups cooked sushi rice (or short grain)
2 Tbsp. rice vinegar
16 ounces imitation crab meat
2 Tbsp mayonnaise
1 Cucumber - peeled, seeded, and cut into strips
1/2 cup Carrots - cut into matchsticks
1 Avocado - sliced
1-2 Jalapenos - sliced
6oz Cream Cheese
Oil to fry tempura shrimp
Tempura batter (boxed or homemade): 1 cup all-purpose flour, sifted. 1 large egg, 1 cup ice cold water. Combine. - OR panko style: 2 eggs, 1 cup flour, 1 cup of breadcrumbs.
Hot Cheetos - crushed
*Served with: Sriracha, Japanese mayo, eel sauce, wasabi, and pickled sushi ginger. You may optionally add these ingredients into the sushiritto before wrapping.

Directions
1. Slice shrimp along curve (underside) to straighten. Batter in tempura for tempura style. For panko style, dip shrimp into flour, then a bowl of beaten egg, and into panko. Fry in oil at 350 degrees, 3-4 minutes each. Set aside.
2. In a blender, add crab meat and mayonnaise until combined. Or, chop crab meat on a cutting board, then mix in a bowl with the mayonnaise. Set aside.
3. In the cooked rice (while still warm), add vinegar. Mix, and set aside. May optionally add 1/2 tsp of salt.
4. Using a sushi mat, place seaweed wrapper on top. Layer prepared sushi rice. If making the Hot Cheetos sushirrto, you will now want to flip the wrapper so the rice is face down.
5. Add as much as you want of the other ingredients and roll. Caution: Do not over-stuff with too much ingredients. It will rip your wrapper.
6. Wrap sushiritto in parchment paper and set in the fridge for 10 minutes. Remove from fridge and cut in half from the center. Serve while fresh.

Tip
*When making the Hot Cheetos sushirrto, wrap the sushi mat in saran wrap, or a zip lock bag so it does not stick to the mat.
*I don't eat raw sushi/fish, but make sure to buy high quality raw fish if you choose to use raw fish.
*May add potato chips, mango, cabbage, lettuce, edamame, seaweed salad, sriracha, fried tofu, and any number of things inside for other flavors.
