| Lemon Amaretti | Italian Biscotti

Ingredients:
3 Cups of Blanched Almond Flour
1 Cup of Granulated Sugar
1 1/2-2 Tbsp of Lemon Zest
3 Egg Whites
1 Tbsp Lemon Juice
1 Tbsp Limoncello
1/2 Tsp of Salt
2 Cups of Powder Sugar
Instructions:
- Preheat the oven to 325 Fahrenheit
-In a large bowl combine salt, sugar, almond flour, and lemon zest.
- In a separate bowl whisk egg whites into a mildly stiff peak
- Add lemon juice and limoncello to the whipped egg whites
- Fold egg whites into dry mixture and mix ingredients until they come together as a dough-like consistency.
- Once thoroughly mixed, roll the dough into separate balls and coat each one in powdered sugar.
- Once all of the cookies are rolled and coated with powdered sugar, place them on a greased baking sheet and place them in the oven for 20-25 minutes.
- Take them out once they are golden on the edges while maintaining a soft interior.
- Let them cool and enjoy! :)
