Blue Zones: Haystacks (Taco Salad)
Haystacks are a vegetarian taco salad made popular by Seventh Day Adventist. This simple and nutritious meal is filled with fresh veggies and can easily be served at potlucks or family dinner. There are many variations of this dish and here is our take. Feel free to experiment on your own. You cant go wrong with any of your favorite taco toppings.
limes
teaspoon salt
1 can of corn
1 warmed and chopped black bean burger patty
corn tortilla chips
1 head romaine lettuce - rinsed, dried, and shredded
2 green onions, chopped
1 can of black or pinto beans
1 avocado
cilantro
1 cup salsa
To make cashew sour cream
INGREDIENTS
1 1/2 cups (225 g) raw cashews, soaked
3/4 cup (180 mL) water
2 tablespoons fresh lime juice
2 teaspoons apple cider vinegar
Scant 1/2 teaspoon fine sea salt
DIRECTIONS
Place cashews in a bowl and cover with water. Soak overnight or for 8 hours if you have the time. For a quick-soak method, pour boiling water over the cashews and soak for 1 hour. Rinse and drain.
Place the drained cashews in a high-speed blender.
Add the water, lemon, vinegar, and salt. Blend on high until super smooth.
Transfer into a small, air-tight container and chill in the fridge. It makes 2 cups. The cream will thicken up as it chills. The cream will keep in the fridge for about 1 week.
For Haystacks
Build salad with a handful of chips. Layer with black been burger patty, chopped lettuce, beans, corn, green onions, salsa, avocado and any other toppings you would like.
