How to Make Authentic Mapo Tofu 麻婆豆腐

Mapo Tofu is a classic Sichuan dish, and really gives you a feel for this type of burning and numbing cuisine. Bold flavor and spiciness are perfectly balanced for a one of a kind experience. It's one of my favorite Chinese dishes and has gathered some praise around the media. Especially in anime, This Mapo Tofu is approved by Yukihira Soma, Kanade Tachibana and Kirei Kotomine. Recipe
- Tofu | soft or firm (2 boxes / 2 pounds)
- Ground Pork (100 grams)
- Ginger (1 tsp)
- Garlic (3 cloves)
- Onion (1/4)
- Scallion (1 stalk)
- Corn Starch (1 Tbl)
- Water (2.5 cups)
Spices
- Spicy Doubanjiang | Chili Bean paste ( 2 Tbl)
- Bao Bei Chili Oil (2 Tbl)
- Fermented Rice or Cooking wine (1 tbl)
- Soy Sauce (1 tsp)
- Sichuan Pepper ( 2 tsp or to taste, can also grind Sichuan Peppercorn)
- Salt (3 large pinches + to taste)
- White Pepper (2 tsp)
- Chicken Powder (small pinch)
- Sugar (small pinch)
1. Cut Tofu into cubes and then let it bathe in hot water and salt, mince all aromatics but cut scallions into thin slices for garnish. Drain after completing step 2.
2. Mix Doubanjiang, Chili Oil, Fermented Rice and Soy sauce in a bowl, then Salt, White Pepper, Chicken Powder and Sugar in another bowl. then starch and water ( 2 tbl) mix in a bowl.
then Ground Pork, you can throw in some fat ground pork too for flavor.
3. Heat up pan, pour in oil and then on a low-medium heat cook the pork and aromatics until brown. Then medium heat throw in the sauce and constantly mix around for 2 minutes.
Pour in 2.5 cups of Hot water, mix and then throw in the tofu and spices.
4. When mixing Tofu be sure to mix from the bottom and not the top to avoid tofu falling apart. Let simmer for 7-10 minutes and then add another large pinch of salt. Adjust flavors if needed.
Re-mix the starch slurry and in 3 portions, pour it over the tofu and mix until nice and thick.
5. Plate the Mapo Tofu and top off with scallions and generous amount of Sichuan Pepper
6. Heat up some oil very hot until white smoke and then pour it over the scallions and sichuan pepper to lock in all the flavor
Done! The perfect Mapo Tofu, eat this by itself or put it over some rice or noodles for an incredible meal.
