Why is cheese "AFFINAGE" important for the Home Cheesemaker?

This video is an introduction to "Affinage". Mary Anne introduces aspiring home cheesemakers to the process of caring for more advanced cheeses while they mature. She discusses the importance of flipping cheese, controlling air flow, humidity, and temperature & the use of ripening boxes. She points out the importance of keeping a record/log of all the steps taken during the aging phase, and she demonstrates how to brine wash a cheese to remove mould build-up. Mary Anne shows how poor cheese care can result in defects in cheeses such as torn rinds, misshapen cheeses, dried out cheeses and fungal contamination. Lastly, an ignored cheese is tasted to see if it is beyond all hope--but to her surprise, it isn't!
