Awesome Butter Cookies
This is the BEST butter cookie I've ever made or eaten. This was given to me by one of my subs Glenda who's mother told her not to try to find a butter cookie better than this because there isn't one and I agree. They're so light and buttery they melt in your mouth. I know you'll love them too! The recipe is below:
16 oz of softened butter...no substitute you must use butter
2 cups of confectionery sugar, sifted
1 & 1/2 tsp. of REAL vanilla
3 cups of all purpose flour
Mix the softened butter and the sugar together. Add the vanilla and mix thoroughly. Gradually add the 3 cups of all purpose flour. When totally combined, refrigerate it for an hour or two so you can roll it in your hands to form a ball. I have since spoken with Glenda...she said roll them smaller, about the size of 1/2 a walnut or an eyeball (lol)..... Place 2 inches apart on a large cookie sheet. You can bake them plain or add nuts or sprinkles on top. The tops of the cookies will not brown but the bottoms should be a light golden brown when they're done. Let them cool from 2 to 5 minutes on the baking sheet before you remove them to a cooling rack. The recipes says to bake them 8 to 10 minutes at 325 F, both of my batches took longer so keep your eye on them so they don't burn. You will not find a better recipe anywhere. Enjoy!!
