Saturday Night Projects at Noma

I had been following René Redzepi's twitter Sundays nights for the funny dishes posted under the hashtag #saturdaynightprojets.
The texts with these pics were often: "#saturdaynightprojects Ignacio from Galicia: "autumn flavors" - said with a FAT Spanish accent" and then, a pic.
But what is a Saturday Night Project?
Every Saturday night, after dinner service, (when I was there, they service finished at 1:30 am!) the chefs present a dish of their creation to the rest of the staff.
The game is very easy: if you test, you give a feedback.
For René: -"It is a sort of team-building exercice. It is about to be creative. I like to see how chefs, stagiaires or apprentices think about food. We never use these dishes for the restaurant, it remains theirs ideas".
Big fun, great inspiration, lots of comments.
It is 3:30 am in cold and windy Copenhagen.
