PLANT BASED ON A BUDGET, Cheap Easy Meals | No. 2

Plant based vegan meals on a budget. Cheap easy vegan meals, $6.30 a day, includes grocery list and recipes. Plant based vegan meal plan for two whole weeks to save you cash money! I went to Costco and Sprouts this week, and each week will continue to build on each each other to eventually build a full pantry!

2 WEEK GROCERY LIST
*Prices will vary depending on the season and where you live

SPROUTS
$1.4 | 3 Red onions (1/4 cup /day )
$6.6 | 3.9 lbs dried Chickpeas/Garbanzo Beans (2 cups cooked/day)

COSTCO
$9 | 14 Tomatoes (1 /day)
$16 | 10 Avocados (1/2-1 /day)
$5.5 | 28 Limes (Costco bag came with 36) (2-3 /day)
$8 | at least 28 Bananas (2-3 /day)
$12 | 4 Pineapples (1.25 cups /day)
$9 | 3 lbs frozen Cherries (just under 3/4 cup /day)
$8 | 4 heads of Butter lettuce (1 cup /day)
$7.5 | 32 oz chia seeds (3 tbsp. /day)
$7.9 | 3, half gallon Soy Milk containers (1 3/4 c./day)
$7.7 | 2, 32oz Salsa containers (1/4 /day)
$6.5 | 2, 32oz Raw Apple Cider Vinegar (2 ct., 2-4 tbsp./day)

1.5, 32oz Raw Apple Cider Vinegar
32 oz chia seeds

FOOD PREP - 4 days at a time

RICE
(makes 1.5 cups per serving when cooked)
*FOLLOW INSTRUCTIONS ON BAG:
2 cups dry rice
+ 4-5 cups water (depending on desired firmness)
Store in air tight containers like mason jars

GARBANZO BEANS / CHICKPEAS
(makes 2 cups per serving when cooked)
4 HOURS IN CROCKPOT:
2 1/2 cups dried garbanzo beans/chickpeas
+ 8 cups water
Drain and store in air tight containers like mason jars

RECIPES

RECIPE No.1 | SMOOTHIE
1 cup pineapple
2/3 cup cherries
1 frozen banana
3/4 cup soy milk
squeeze of lime (optional)

RECIPE No.2 | CHIA PUDDING
1 banana, frozen
2 tbsp. chia seeds
2 scoops LIVfit powder
1 cup soy milk
Top with 2 tbsp. peanut butter

RECIPE No.4 | CHIA WATER
1 tbsp. chia seeds
8oz water (or more)

RECIPE No.3 | SALAD
1 cup lettuce
1 tomato
1 cup chickpeas/garbanzo beans
1/4 cup red onion
1/2 avocado
1 tablespoon or more of raw apple cider vinegar (add as much as you want to taste)
Optional: Salt & Pepper

RECIPE No.5 | RICE BOWL
1 1/2 cup rice
1/4 cup pineapple
1/4 cup salsa
1/4-1/2 avocado
squeeze lime on top
OPTIONAL: Salt, pepper, turmeric, cumin, paprika (all to taste)
