Almond Cookies

Ingredients:

120g almond powder
180g plain flour
120g caster sugar
1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
120ml cooking oil
1 egg yolk
sliced almonds

Instructions:

1. prepare a parchment lined baking tray.
2. whisk all the dry ingredients together.
3. pour oil into the mixture and mix until well combined.
4. weigh out 7g of batter for each cookie and roll it into a sphere.
5. beat an egg yolk for glazing
6. lightly brush the cookie and place a sliced almond on top of each.
7. bake at 175C for 15-20 minutes.
8. let the cookies cool on the pan for 5 minutes or until firm before transferring to a cooling rack.
