CHILI'S | Chicken Enchilada Soup

Chili's popular Do-It-Yourself version of their Chicken Enchilada Soup is what's on the menu today. Serve it as a starter, side dish or entrée, this hearty and filling soup has got you covered! Ingredients (In order of appearance):
3 cups diced yellow onion
2 large or 3 medium cloves of grated garlic
2 tsp. chili powder
2 tsp. ground cumin
1/2 tsp. cayenne pepper (or less if you don't care for spice)
1-1/2 cups of Masa corn flour
4 quarts of chicken stock
2 cans of drained Muir Glen fire roasted tomatoes
1 lb. (16 oz. box) cubed Velveeta cheese (trust me on this)
4 cups of roasted and pulled chicken-white and dark meat
Pepper and salt (if needed, taste first). I love pepper, so I def added some. Salt, just make sure that it is not too salty for your taste before you add any additional.

Toppings (all optional):
corn chips or tortilla strips, grated cheddar, green onion, cilantro, sour cream, fresh/pickled jalapeno
