Wonton Soup Recipe
-----------------------------------------------------------------
Ingredients:

— Filling —
220g Ground Pork
200g Bok Choy
200g Frozen Shepherd's Purse
5g Salt
3g Sugar
½ Tbsp Soy Sauce
White Pepper, To taste
— Soup —

1 Egg for making shredded egg crepes
3g Seaweed
3g Dried Baby Shrimps
3g Minced Green Onion
3g Yibin Pickled Cabbage
Salt and White Pepper, To taste
1/4 Chef's assorted aroma oil

— ASSORTED AROMA OIL —

Ingredients:

4 cups Vegetable oil
150g Shallot
250g Green onion
150g Celery
150g Carrot


Directions:

1. Heat the oil in a wok over medium high heat.
2. Add shallot, green onion and stir well. Turn off the heat at temp 482°F/250°C.
3. Add celery and carrot and fry ingredients until dark brown to maximize flavors.
4. Remove the aromatics from the oil using a strainer.
5. Store in an airtight bottle or jar.
