Shopping List:
1.5 - 2 lbs fresh collard greens
2 quarts of chicken broth/stock
2 tbsp better than bouillon chicken base
Smoked Turkey Wings/Legs/Necks
1 Onion
2 Stalks of Celery
2-3 tbsp apple cider vineage (optional, more or less to taste)
few dashes of hot sauce
2 pinches white sugar (to taste)
1-2 tbsp butter
red pepper flakes (to taste)
salt, pepper, garlic, onion powder
Directions:
Start by making your stock - Add smoked meats (defrosted preferably) to an 8-10quart pot and add 2 quarts of chicken broth. (you may need to add some water to this as the liquid evaporates so keep on eye on it) Add in chicken base, 1 halved onion and a few stalks of celery (you can throw in some fresh herbs or other veggies that you have in the fridge as well if you want - the key here is to infuse that stock with as much flavor as you can!)
Bring your broth to a boil for about 8-10 mins and then reduce to a simmer and cover. Allow this to simmer for about 1-2 hours or until the meat shreds easily from the bone (nice and tender). Remove the smoked meat and veggies (you can leave the onions in there if you want!) Shred the meat from the bone and add back to your stock . Taste your stock and adjust the flavors to your preference. (Add apple cider vinegar, sugar, butter, salt, pepper, garlic, onion powder, hot sauce, and red pepper flakes - to taste)
Fold your collard green leaves over the stem and remove. Roll into bundles and cut into 1-2 inch thick pieces. Rinse your collard greens thoroughly under cold water or soak them for as long as you prefer. (Once the water runs clean and the greens feel smooth you're good to go) Once greens are clean and chopped to your preferred size, add them to your stock a little at a time so that they wilt down and fit in the pot. Coat them in your flavorful stock and simmer for about an hour. Check for seasoning and tenderness (taste as you go) and cook an additional 30 mins if needed. Enjoy!
