Tomato and Spinach Dahl
Join plant-based Development Chef Suzy Smith and Dr Paul Kroon as they make iron-rich #vegan Tomato and Spinach Dahl 🍅
🌿The #veganrecipe has been developed by experts in nutrition to maximise iron intake and absorption. Iron is an essential nutrient in our diet, it’s important in making red blood cells, which carry oxygen around the body.
Follow the recipe to make your own iron-rich vegan dahl!
Ingredients:
1 tablespoon of oil
1 red onion
2cm piece chopped Ginger
3 chopped garlic cloves
1 tsp of turmeric
1 tsp of cumin seeds
1 tsp of curry powder
300 grams of red lentils
400g tin chopped tomatoes
500ml vegetable stock
4 large handful Spinach
Brown Rice
Squeeze of Lemon
1 red chilli
1 handful of Coriander
