SPICEY TEQUILA PASTA RECIPE:

2 tbsp olive oil
½ shallot, finely chopped
1 small garlic clove, finely grated
1/4 cup (70g) tomato paste
2 tbsp tequila/vodka (tastes the same)
1/2 cup (120ml) heavy cream
1 tsp chilli flakes
Kosher salt, freshly ground pepper 200g rigatoni
1 tbsp unsalted butter
Parmesan
fresh basil
