Coconut chia pudding...

INGREDIENTS
1 can coconut milk
¼ cup chia seeds

METHOD
1. Combine both ingredients in a jar and shake until well combined.
2. Let sit in the fridge for two hours. Check on it and maybe shake it again.
3. Scoop out some of the pudding into a bowl and serve with fruit, granola, maple syrup or whatever topping suits you.

Mango Sorbet...

INGREDIENTS
2 cups frozen mango
A few splashes of orange juice

METHOD
1. Blend both ingredients in a high speed blender until smooth, adding in as much OJ as you need to obtain your preferred consistency.
2. Top with coconut flakes, fruit, granola, or anything you like.

Simple Fresh Pasta...

INGREDIENTS
1 package of spaghetti noodles
A tray of cherry or grape tomatoes (or small regular tomatoes)
4 cloves of garlic, minced or pressed
1 tbsp olive oil
1 cup fresh basil, chopped

METHOD
1. Boil noodles according to package and set aside.
2. Roast tomatoes for about 10 minutes at 400 degrees F, or until juice and bursting. Set aside.
3. Sauté garlic in oil on medium heat until lightly browned.
4. Add roasted tomatoes, smashing about half the tomatoes to get out the juices.
5. Add cooked noodles and combine to coat them with sauce.
6. Stir in fresh basil.
7. Top with balsamic glaze and kalamata olives.

Green PB Smoothie...

INGREDIENTS
1 stick celery
Handful of greens
1-2 tbsp peanut butter
1 tbsp flax seeds
1 tbsp hemp seeds
1 tbsp soaked chia seeds
1 tbsp barley grass juice powder
4-5 frozen bananas
Enough water to blend

METHOD
1. Blend!

Peanut Noodles...

INGREDIENTS
For the sauce:
½ cup peanut butter
½ cup water
¼ cup soy sauce
2 cloves garlic
2 tbsp lime juice (one lime)
3 tbsp pure maple syrup
1 tsp Sriracha

For the rest:
1 package of pad thai noodles (about 8 oz)
1 cup cabbage, sliced
1 bell pepper, sliced
1 package of extra-firm tofu, cubed
1 tbsp coconut aminos

METHOD
1. Cook noodles according to package and set aside.
2. Blend sauce ingredients.
3. Sauté veggies and tofu in coconut aminos for about 4 minutes.
4. Add sauce and noodles to the pan. Stir to combine.

Layered Bean Dip...

INGREDIENTS
1 can fat free refried beans

1-2 avocados
Some garlic powder
Some salt
Some lime juice

1 cup cashews
½ cup water
1 tsp apple cider vinegar
Salt to taste

Some lettuce, chopped
Some cilantro, chopped
Some green onion, chopped

Some pico de gallo

METHOD
1. Heat up beans.
2. Mash and mix guac ingredients.
3. Blend cashew sour cream ingredients until super smooth.
4. Layer that dip!
