Betty's Sauerkraut Salad

Betty demonstrates how to make Sauerkraut Salad. This is an unusual salad that you will enjoy, particularly in the summer along with hot dogs!

Sauerkraut Salad

24-ounce jar chopped or shredded sauerkraut, undrained
1 medium to large onion, finely chopped
1 cup celery, finely chopped
1 medium green pepper, finely chopped
4-ounce bottle diced pimiento, drained
¾ cup sugar

In a large bowl, mix all ingredients, except sugar, then sprinkle sugar over top of mixture. Cover with plastic wrap and refrigerate 8 hours or overnight. To serve, first toss salad completely. Then use a slotted spoon to dip Sauerkraut Salad onto plate, leaving behind excess liquid. This salad is piquant and delicious. I hope you enjoy it! --Betty ♥
