Rolls - Dinner rolls/Hamburger Rolls/Hotdog Rolls - Cast Iron cooking with the Iron Maiden

These rolls are perfect dinner rolls, they also make great hamburger and hotdog rolls

5 cups all-purpose flour (plus up to 1/2 cup extra if needed)
1/4 cup sugar
1 package yeast (2 1/4 tsp /7 grams)
1 1/2 tsp salt
1/2 cup warm water
1 cup milk (scalded and cooled to lukewarm)
2 eggs
1/8 cup vegetable oil

Optional:
Sesame seeds
Poppy seeds

Combine all ingredients (except the sesame/poppy seeds) in your mixer. Use a dough hook and mix until ingredients are combined. If you do not have a dough hook use 1/2 of the flour mix until smooth then use a spoon to stir in the remaining flour. Cover dough with towel and let rest for 10 minutes. After resting dough turn mixer on and knead for 10 minutes or until dough is smooth and elastic. (If you do not have a dough hook knead by hand). Place dough in a greased bowl and turn so top of dough is now coated with oil.
Cover dough with clean towel and let dough rest until doubled in size ~ 1hour.
Shape dough into rolls or desired shapes. Let rise until doubled in size ~ 1 hour.
If you want to add sesame/poppy seeds brush dough with beaten egg and then sprinkle with sesame or poppy seeds
Preheat oven to 375 and bake for 12-15 min or until browned. (Internal temp of ~ 210F)
If you did not add sesame/poppy seeds brush top of rolls with a little butter - this will make the soft and a beautiful shine to your bread.
