Sponge Dosa with Coconut Chutney & Aloo Masala
Servings: 4 dosa
*Coconut 🥥 Chutney
Ingredients:
½ cup fresh coconut (roughly chopped)
1 green chilli
½ tsp cumin seeds
½ tsp salt (or to taste)
Juice of ½ lemon
Water as needed
Tempering:
1 tsp oil
½ tsp mustard seeds
Few curry leaves
Method:
1. Blend coconut, green chilli, cumin, salt, lemon juice, and water into a smooth chutney.
2. Heat oil, splutter mustard seeds and curry leaves, and pour over chutney.
*🥔Aloo Masala
Ingredients:
2 tsp oil
½ tsp cumin seeds
½ tsp mustard seeds
1 onion (julienned)
2 green chillies (chopped)
Few curry leaves
½ tsp turmeric powder
½ tsp black pepper powder
3 boiled potatoes (mashed)
½ tsp red chilli powder
½ tsp salt (or to taste)
Method:
1. Heat oil in a pan. Add mustard and cumin seeds, let them crackle.
2. Add onion, green chillies, and curry leaves. Sauté until onions turn light golden.
3. Add turmeric and black pepper, Mix well.
4. Add mashed potatoes, red pepper and salt,stir and cook for 3–4 minutes.
5. Keep aside.
* Sponge Dosa
Ingredients:
1 cup semolina (suji)
½ cup poha (soaked 10 minutes)
1 cup curd
Water as needed
½ tsp salt
⅓ tsp baking soda
Oil for cooking
Method:
1. Blend suji, soaked poha, curd, salt, and a little water into a smooth batter.
2. Just before cooking, mix in baking soda.
3. Heat a dosa pan and lightly grease with oil.
4. Pour a ladleful of batter and spread gently in a circular shape (medium thickness).
5. Drizzle some oil on top. Cook until the surface looks dry.
6. Cook only on one side.
✅ Serve hot Sponge Dosa with Aloo Masala & Coconut Chutney.
