Instant Pot Seafood and Rice made easy
I chose to try something simple. I wanted a one-pot dinner, but I used a skillet to sear the scallops. That could be optional, and if you use bay scallops a skillet isn't necessary at all. This was an experiment that went well. Using only the residual heat in the Instant Pot after cooking the rice, I was able to cook the seafood. Don't try that with raw chicken, which needs to be cooked to 170°F (77°C) for safe eating. Also, this was a way to use only ingredients on hand — no shopping — which is important because we are currently under a stay-at-home order here in California.
