SESAME PEANUT NOODLES (PROTEIN PACKED + VEGAN)

This dish serves 3 very hearty helpings- double/triple the recipe for your squad:
Ingredients:
- 1 pack Brown rice noodles
Veggie saute
- 1 1/2 red bell pepper (orange and yellow are magical too), sliced
- 1 poblano pepper, sliced thin
- 1 carrot, sliced thin
- 1/2 medium purple onion (I used a whole baby purple onion)
- 5-6 garlic pods, chopped
- 4 sprigs green onion, chopped
- 1/2- 1 lemon juice
-1 tbsp grapeseed oil
- 1 tsp liquid aminos
Peanut Sauce- you can mix these ingredients up depending on if you like a bit more spice, sweet or savory flavor.
- 8 tbsp creamy peanut butter
- 1 tbsp coconut sugar
- 1 tbsp hoisin sauce (double check its vegan)
- 2 tbsp siracha
- 1 tbsp liquid aminos
- 2 tbsp toasted sesame oil
-1/2 lemon juiced
-3/4 cup water
Seared Tofu
- 1 pack baked tofu
*alternatively you can use extra firm/firm tofu
wrap your tofu in a clean cloth, set on a plate, place a skillet(with weight) on top of the tofu- this will help press and release extra water. leave for 30 minutes
- 1 tbsp liquid aminos
- 1/2 tbsp siracha
- 1/3 tbsp toasted sesame oil
- 2 tbsp grapeseed oil
- 1/2 cup peanuts
- 1/3 cup sesame seeds
- 1/4 cup black sesame seeds
RECIPE:
- heat grape-seed oil on medium, sauté purple onion, poblano pepper, red bell pepper and green pepper - for 3 minutes
- add liquid aminos- sauté for 5 minutes
- add carrots - sauté for 1 minute
- lower heat to low and allow to sit
* 1 minute before adding noodles, sauce - add garlic to the pan and sauté 1 minute
- make your peanut sauce
- mix peanut butter, coconut sugar, hoisin sauce, siracha, liquid aminos, toasted sesame oil, lemon juiced and water - set aside
- toast sesame seeds and peanuts on low-medium heat
- keep them moving to keep from burning
- this should be done in 2-3 minutes
-set aside
- marinate the tofu (baked tofu or pressed tofu) for 5 minutes
- add grapeseed oil to the skillet on medium
- when hot, add tofu
- sear on each side 3-4 minutes(or until golden brown)
- I sear all sides and stand them up on the pan
- allow to cool on a cloth, to remove excess oil
- cook pasta according to instructions
- add drained pasta to the veggie skillet, add sauce, mix
- sprinkle with seeds and nuts
- add tofu
- serve with lemon/lime wedge
