Glazed Lemon Cookies | Soft Melt In Mouth Lemon Cookies | Ami’s Cooking

Lemon cookies are a perfect spring time dessert. Lemon cookies are so refreshing to eat because of their sweet and sour flavor. This recipe does not use any eggs so it's perfect for those who have dietary restrictions related to eggs!

Lemon Cookies Ingredients:
1/2 cup room temperature unsalted butter
1/4 cup icing sugar
1 lemon worth of zest
1/2 tsp vanilla extract
1 tsp lemon juice
1/8 tsp salt
3/4 + 1/8 cup all purpose flower
1/8 cup corn starch

Lemon Glaze Ingredients:
1/2 cup icing sugar
1 tbsp fresh lemon juice
few drops yellow gel color
1/2 tsp vanilla extract
1 lemon worth of zest

Lemon Cookies Ingredients:
1. Sift 1/4 cup of icing sugar. Combine it with 1/2 cup room temperature unsalted butter.
2. Zest 1 lemon. Add 1/2 teaspoon of vanilla extract, 1 teaspoon lemon juice, and 1/8 teaspoon of salt. Combine well.
3. Add a few drops of yellow gel food color to the mixture. Mix.
4. Sift 3/4 cup and + 1/8 cup of all purpose flour. Also, sift 1/8 cup of cornstarch. Mix using a spoon to form the dough.
5. Wrap the dough in plastic wrap. Smooth out the dough. Let it freeze for 30 minutes.
6. In the meantime, make the lemon glaze that the cookies will be decorated with. Sift 1/2 cup of icing sugar. Add 1 tablespoon of fresh lemon juice. Then, add few drops of yellow gel color and 1/2 teaspoon of vanilla extract. Stir well. Zest 1 lemon and add it to the mixture. Combine well with a spoon. Lemon glaze is ready.
7. Line baking sheet with parchment paper. Unwrap the dough. Form a 1 inch thick log from the dough. Cut it into 12 pieces. Shape each piece into flat balls. Place each piece onto the baking sheet. Make sure that there is distance between the cookies on the pan. You can bake the cookies in a pressure cooker with salt or you can bake the cookies at a low temperature in the oven (300 degrees Fahrenheit). Bake for 20 minutes or until the bottom is golden.
8. Place the cookies on a wire rack and let them cool completely.
9. Decorate the cookies with the lemon glaze from step 7. Let the glaze dry for 30 minutes. Then, the cookies are ready to be served.
