Sweet Chilli And Rice Noodle Salad | Asian Bites

INGREDIENTS:
2 Avocados
100 g Bean Thread Vermicelli Noodles
Handful of Walnuts
1/4 tsp Dried Chilli Flakes
2 1/2 tbsp Sweet Chilli Sauce
1/2 tsp Sesame Oil
1/2 tsp Light Soy Sauce
1/8 tsp Salt
2 Pinches of Ground White Pepper

STEP 1: PREPARE NOODLES
Prepare the glass noodles by placing them in a large bowl and covering them completely with freshly boiled water. Use a pair of chopsticks to loosen the strands and then allow the noodles to soak for 10-15 minutes until they are translucent but still al dente. Drain the noodles in a sieve to ensure that there is as little moisture left over as possible.

STEP 2: MIX DRESSING INGREDIENTS
Put the drained glass noodles to a large mixing bowl along with all of the ingredients for the dressing. Toss lightly to combine.

STEP 3: ADD AVOCADO AND OTHER INGREDIENTS
Add the avocado, walnuts and dried chilli flakes (if using) to the noodles and toss gently.

STEP 4: FINISH AND SERVE
Serve the salad in a shallow dish with an extra drizzle of sweet chilli sauce, if desired.
