Ever wanted to make Australian desserts. Well tonight we try our hand at an old australian favourite.

LAMINGTON RECIPE:

Step 1 ( making the sponge)

Ingredients:
185g Plain flour
2tsp Baking powder
40g Corn flour
200g Softened butter
230g Castor sugar
2tsp Vanilla extract
3 Eggs
125ml Full cream milk

Preheat oven to 180 degrees celcius
Grease a lamington tin ( 20x30cm baking pan)
place grease proof paper at the bottom of the tin

Sift corn flour and flour and baking powder into a large mixing bowl.
Add butter, sugar, vanilla, eggs and milk.
Beat in a cake mixer or with hand held beaters/mixer at low speed until the mixture is fully combined.
Beat on high until mixture is thick and yellow and has increased in volume.
Pour mixture into prepared baking tin and bake in your preheated oven for 30-35 minutes.
(cover the cake with aluminium foil if it is cooking on top too quick. This is what we did)
When the cake is ready remove form th oven and leave to cool for five minutes before turning it out onto a wire rack to cool. ( Make sure the cake is upside down so that the top flattens)
Using a serrated knife (We used a bread knife) cut the cake into small squares.
Now you can either leave the cake out to go slightly stale or do what we did and put it in the freezer for about 10 minutes to chill. (We washed up during this time)
This brings us to step 2.

Step 2 (Making the icing)

Ingredients:

3 cups Icing sugar
3Tbsp Cocoa powder
4-6 Tbsp Boiling water
1/2 Tsp Butter
1/4 Tsp Vanilla
1/2-1 cup Dessicated or shredded coconut

Mix sugar, butter, cocoa, vanilla and boiling water in a bowl.
place coconut in another bowl.
Take your Sponge squares that you prepared earlier and one by one roll them
first in the chocolate icing mixture and then in the coconut before placing them on a rack to dry.
Repeat this process until all the squares are completely covered in your delicious chocolate coconut icing.
Now put in the fridge to harden the icing or eat them straight away.
Serve by themselves or with Jam and cream.
