Iberia has two A321neos at the moment (EC-NGP and EC-NIA). If you want to fly one of them, you should look for routes from Madrid to the Canaries and Balearic Islands, because Iberia use them on these routes. It may be that Iberia expand the routes of the A321neos in the future, but currently they are used on these routes. To give you some examples of Airport Codes of the Canaries and Balearic Islands, look on your booking page for LPA, TFS, TFN, ACE, FUE and PMI.
On Google Flights (https://flights.google.com/), the "Matrix" (https://matrix.itasoftware.com/) and Iberias official website (https://www.iberia.com/) is shown, which aircraft type will probably be used for the flight. Just look for "A321neo", book the flight/trip (Note the C19 restrictions) and then enjoy your A321neo flight!

If I may give you a recommendation for a special seat, I would recommend you a window seat (A or F) in the rows 1 - 12, which are in front of the wing and offer you a fantastic engine view.
