🦃3 After-Thanksgiving LEFTOVER TURKEY RECIPES | Freezer Meals, too!

What can you do with leftover turkey? Today I have 3 after Thanksgiving leftover turkey recipe ideas just for you! And the best part is all 3 leftover turkey recipes are also freezer-friendly. That means you can turn any of these after Thanksgiving leftovers into easy freezer meals, too!

The 3 leftover turkey recipes using Thanksgiving leftovers that we're making today are leftover turkey noodle soup, after Thanksgiving casserole bake, and cheesy turkey tetrazzini!

These leftover turkey recipes will be up on LargeFamilyTable.com at some point, but I'm having a lovely holiday time with my family. Here are the Thanksgiving leftover turkey recipes right here for you!

***AFTER THANKSGIVING LEFTOVER TURKEY RECIPES***

1.) LEFTOVER TURKEY NOODLE SOUP

Ingredients you'll need to make Leftover Turkey Noodle Soup:

*Leftover turkey (stretch what you have available)
*One onion, chopped
*Several celery stalks, chopped
*One 32-oz bag of frozen peas, carrots, corn
*Three 48-oz containers of broth (or make your own leftover turkey broth)
*Four cups water (if you have less broth you and replace with more water - use what you have available)
*One cup heavy cream (if you like)
*Two 12-oz bags of your favorite egg noodles
*One tbsp each of parsley, onion powder, garlic powder
*Salt/Pepper per preference
*Two tbsp real butter (to cook veggies in - see below)

Recipe Directions for Leftover Turkey Noodle Soup:

*In Dutch Oven or large pan cook 1 chopped onion, celery, and frozen veggies until tender.
*Boil, cook, and drain egg noodles per package directions.
*In large stock pot add broth, water, spices, and peeled/shredded leftover turkey meat on low heat until noodles and veggies are done.
*Add veggies and egg noodles to the stockpot of turkey soup once those are complete. Continue to simmer all ingredients together for a bit (how do you like those *exact directions, ha!*) to let flavors blend and stir as needed.
*Serve Leftover Turkey Noodle Soup with salad, sandwiches, or as a meal on its own.

Freezer Meal Directions --- Once Leftover Turkey Noodle Soup is cooled fill several containers with soup leaving about 1 inch or so from the top to give room for expansion while freezing. I've talked to moms who use leftover ice cream buckets for freezing large batches of soups. I use a variety of containers that work well for soup freezer meals.

To use your soup freezer meals just set your container out in the refrigerator the day before you need it (or if you forget, defrost the day you need your soup using the cold water defrost method). Once soup is defrosted just reheat fully in microwave or stove top.
2.) LEFTOVER TURKEY TETRAZZINI RECIPE

Ingredients needed for the Leftover Turkey Tetrazzini Recipe:

*Two pounds of your favorite noodles (I used thin spaghetti)
*Two cups sour cream
*One 8-oz block cream cheese
*Four cups shredded cheese (for mixture)
*Four cups shredded cheese (two cups each topping for each bake)
*Leftover turkey (stretch what you have available)
*One onion, chopped
*Several celery stalks, chopped
*One 32-oz bag of frozen peas, carrots, corn
*Salt/Pepper per preference
*Two tbsp real butter (to cook onion, celery, and frozen veggies)

Directions for Leftover Turkey Tetrazzini:

*In Dutch Oven or large pan cook 1 chopped onion, celery, and frozen veggies with 2 tbsp butter until tender.
*Boil and drain noodles per package directions.
*In mixing bowl combined shredded leftover turkey, fully cooked and tender onion, celery, and veggies, cream cheese, 2 cups sour cream, 4 cups shredded cheese, and mix completely. I use my hands for this step.
*Fill two 9x13 baking pans with leftover turkey recipe mixture.
*Top each bake with two cups of shredded cheese each.

*To bake immediately place in oven at 375 for 30-35 minutes or until hot and bubbly.

Freezer Meal Directions -- to use this Leftover Turkey Tetrazzini as a freezer meal wrap each 9x13 pan in two layers of foil (don't forget to label/date your foil) and two layers of plastic wrap. Freeze for up to 3-months.

To cook your freezer meal just set out from freezer into refrigerator the day before you need it and defrost. On cooking day remove the plastic wrap and foil. Bake at 375 degrees for 45 minutes or until hot and bubbly. Casserole freezer meals need to reach an internal temp of 160 degrees.

3.) AFTER THANKSGIVING CASSEROLE BAKE RECIPE

Ingredients for the After Thanksgiving Casserole:

*Leftover Turkey
*Leftover Stuffing
*Leftover Gravy
*Leftover Mashed Potatoes
*Leftover Veggies (corn, green beans, carrots - whatever you have!)
*Leftover Cranberry Sauce

After Thanksgiving Casserole Recipe Directions:

*In 9x13 pan layer mashed potatoes, leftover turkey, veggies, gravy, cranberry sauce (or not), and top with leftover stuffing.
*Cover with layer of foil and bake at 375 degrees for 35-40 minutes.
