For the burger : Ingredients:
2 carrots
1 onion
3 tbsp tahini
5 tbsp oat flour
juice of 2 lemons
10 tbsp whole wheat bread crumbs
3-4 baked eggplant
2 tbsp cumin
salt to taste
3 tbsp olive oil
Garnish your burger with:
shredded purple cabbage
shredded carrot
Avocado
mayonnaise

How to make these burgers

place carrots and onion in a food processor and process for about 10 second. Add the rest of the ingredients and process until well combined. Once combined, with a spoon scoop out the mixture and shape into burgers with your hand. place the burgers in a frying pan on high heat with a few drops of olive oil or coconut oil. fry each side of the burger for 1.5 minutes.

you can use burger buns, pita bread, cabbage or lettuce leaves to eat your burger, or you can just make a platter.
