Putong Balanghoy/Balinghoy with Bokayo (Steamed Putong Kamoteng Kahoy)

Putong balinghoy is one of the local snacks in the Philippines. It is a steamed grated cassava roots (kamoteng kahoy/balinghoy), with a caramelized young coconut (bokayo) as filling and topping. In order to achieve a sticky consistency, I did not fully drain the grated cassava.

Puto Balinghoy or Puto Cassava Ingredients:

Grated cassava roots
Brown Sugar
Grated young coconut

Note: Measurement of each ingredients depends on your taste. :)

1. Ihalo ang asukal na puti sa ginadgad na balinghoy. (pigain muna ang balinghoy bago haluan ng asukal)
2. hulmahin ang ginadgad na balinghoy sa maliit na bao at lagyan ng palaman na bokayo.
3. Steam for 20 mins o hanggang maluto.

Para sa bokayo, ilagay lang ang pinaghalong pulang asukal at kinayod na buko o alangang niyog sa kawali at haluin ito hanggang magcaramelize ang mixture.
