HOW TO MAKE KETO PIZZA WITH COCONUT CRUST (EGGLESS) - HEALTHY & DELICIOUS !

As some of you have requested for a coconut flour crust, I came up with two versions using my Coconut Flaxseed Bread recipe. One is with eggs and the video was uploaded on 13th July 2020. This one is without eggs and it is equally good. If you're making a vegan version, you may wish to use vegan cheese instead of mozzarella. At my home country, vegan cheese is not available here.
While these coconut flaxseed crusts may not be as crispy as the almond flour version but they taste just as good - slightly crispy at the edges and soft at the center. If you prefer a crispier crust, you need to make the crust thinner and bake it a little longer. The plus point is that these versions are way lower in net carbs, nut free and a much healthier option.
Please note that I have only provided the nutrition info for the crust only. The toppings are completely up to your preference. I have shown you at the end of the video on how to turn leftover pizza into the best pizza sandwich.

NUTRITION INFO
FOR CRUST ONLY
[Total servings = 10]
Per serving ;
Net Carb = 0.8 g
Calories = 74
Total Fat = 5.8 g
Protein = 2.6 g
INGREDIENTS
FOR CRUST
Dry Ingredients;
Coconut flour = 60 g / 1/2 cup
Ground Golden Flaxseed or Flaxseed Meal = 60 g / 1/2 cup (Brown flaxseeds can be used too)
Psyllium Husks (Finely Grounded) = 18 g / 2 tbsp.
Baking Powder = 8 g / 2 tsp
Salt = 1/2 tsp
Italian Seasonings = 1 tbsp.
(Note: As an option, you can add 1 tsp of instant yeast just for flavor)
Wet Ingredients;
Coconut oil / olive oil / melted butter = 30 ml / 2 tbsp.
Hot or boiling water = 240 ml
FOR PIZZA SAUCE
Canned Peeled Tomatoes = 200 g / 7.25 oz
Tomato paste = 2 to 3 tbsp.
Olive oil = 2 tbsp.
Dried Basil = 1 tsp
Ground Oregano = 1 tsp
Garlic Powder = 1 tsp
Onion Powder = 1 tsp
Dried Parsley = 1 tsp
Black Pepper = 1 tsp
Salt = 2 to 3 tsp
(Note: Blend all ingredients in food processor or blender until the mixture forms a sauce. Adjust taste accordingly)
FOR TOPPINGS
Mozzarella or Vegan cheese = 180 g
Black olives = 4 to 5 (sliced)
Button Mushrooms = 3 to 4 (sliced)
Handful of Tricolors Capsicum (cut into strips)
Chopped parsley for garnishing
DIRECTIONS
1. Mix all dry ingredients in a bowl until well combined. Then add the wet ingredients and mix until a dough is formed. Knead dough for awhile just to incorporate all the ingredients and then shape dough into a ball.
2. Place the dough on a parchment paper. Cover with another layer of parchment paper. Flatten the dough and roll into a round shape. You can also use your hands to shape the dough for a rustic look.
3. Use a lid to cut the dough into a round shape. The lid used in the video is 11 inch in diameter which is just nice for the entire dough with only a little bit of excess left. For a smaller pizza, this dough can make 2 x 7 1/2 inch thin pizza.
4. Prick holes with fork to release air bubbles during baking.
5. Bake at 350F or 180C at the lowest rack for 15 to 20 mins or until browned. Then flip over and bake for another 5 to 10 mins.
6. Spread the pizza sauce evenly on the crust. Then top with mozzarella cheese or vegan cheese and all other ingredients.
7. Bake on the middle rack for 10 to 15 mins or until the cheese has melted.
8. Remove and sprinkle with chopped parsley.
9. Slice with a pizza cutter and serve immediately.
10. Refrigerate any leftovers and turn them into the best pizza sandwich by using panini press.
11. Brush the hot plates with oil. Then place 2 slices of pizza face to face on the hot plate and cook accordingly. You can also use a grill pan to make this pizza sandwich.
