How to Make Spelt Panettone test bake 1: spelt panettone bread in one day
This Christmas make a homemade Spelt Panettone. In my video test bake, 1 is the Easy Panettone from Laura in the Kitchens but with white spelt flour and no citrus peel. Try baking a panettone this Christmas. A homemade panettone is so much better than store-bought and costs less. The making process for panettone is lengthy (actually a whole day) but worth the effort. I used white spelt flour but feel free to swap this out for regular wheat flour. Panettone is an enriched dough with eggs, milk, dried yeast for ease, butter, zest of orange and lemon, vanilla and your choice of dried fruit. My test recipe was inspired by Laura in the Kitchen, however, I tweaked the flour and changed the fruit combination. Takes = starter 10 mins, rest 30 mins, dough 10 mins, rest 2 x 3 hours (house must be warm)
Total time needed = 7.5 to 8 hours
Bakes = 35 to 40 minutes
Makes = 1 large or 2 small 11cm (6 inches) size paper mould (dough should weigh 700g per mould)

0:35 add warm water, warm milk and sprinkle yeast on the top
1:40 how to make the first dough starter
2:00 whisk, cover and rest 30 mins
2:38 whisk eggs, the balance of sugar, salt, zest and vanilla (don’t forget the vanilla Sue)
4:30 add in the starter and mix on low
4:55 add the balance of flour
6:20 add in dried fruit
6:50 flour your bench oil a large bowl, prepare the plastic cover
7:24 add a little more flour in the bowl if needed
8:20 remove dough from the bowl and place on a floured bench
9:00 cover with plastic and rest for 3 hours
9:10 dough ready to divide
11:05 cut X on top and brush with butter (I might leave this out next time)
11:30 cover and rest for another 3 hours
11:41 remove the plastic and add egg wash to the top plus pearl sugar sprinkles
12:56 add foil after 20minutes, next time I will do this earlier
13:08 remove from the oven and cool hanging upside down
14:30 reveal, cutting and taste test
