Sicilian Seafood Bruschetta. Your new fav poison.

10 Littleneck Clams
1/2 Pound Swordfish Steak
10 Olives
10 Sugar Bombs Tomatoes
20 Capers
1/2 glass White Wine
1 Garlic Clove
1 Tsp Chili Flakes
1 Bunch of Fresh Parsley
1/2 Tsp Oregano
Olive Oil (Like Rain)
Sourdough Bread

1. Submerge the clams into cold water and sea salt and leave it for 30 min to purge.
2. Cut the swordfish into cubes, clean the tomatoes and halve them, wash the capers (if you bought the under salt once) and chop them finely - they will substitute our salt.
3. Add 3 Tbsp of Olive Oil in a pan, add the crushed garlic and chili flakes, stir fry for a minute then add the clams and the wine, cover with a lid and let the clams open (roughly 3-4 min). Remove them from the heat by draining them into a sifter. Keep the juices.
4. Add 1 tbsp of Olive oil in the same pan and start stir frying the swordfish with some black pepper, add the capers, the olives and tomatoes, finally the clam juice. Simmer for 10-15 minutes.
5. Get your bread ready - for my bruschetta I cut a thick slice of sourdough and toasted with some olive oil and oregano (perfect pairing with fish).
6. Remove some clams from the shell and add them to the swordfish pan, keep a couple to decorate.
7. Assembly the bruschetta with toasted bread, the swordfish/clams sauce, add two clams with the shell and some parsley leaves.
8. Enjoy a piece of heaven.
